Oh thanks Pam! I'm going to bake them tomorrow, my last day before I move back to campus where I won't have an oven Smile One thing though: what kind of cheese goes in the mix? And what does oz acutally stand for? Wink

We use any cheese that you can grate, usually Ceddar, Red Leicester. I'm not sure about Dutch cheese, but something a bit stronger than Gouda, as some of the taste from mild flavoured cheese is lost in the baking. Our Red Leicester is strongly coloured also so the scones look better.

Cheers, Pam. Actually, my experience is that what they sell in other countries as Dutch cheese is hardly ever Dutch cheese Laughing I'll go with old Dutch cheese then, it's pretty strong and my favourite.
